2lbs.Boneless Skinless Chicken BreastsAbout 2 Large Chicken Breasts (1.5-2lbs)
1Yellow OnionDiced
2ClovesGarlic Minced
24oz. Low Sodium Chicken BrothAdd more if needed
2CansGreat Northern Beans (15 oz can size)Drained and Rinsed
2CansDiced Green Chiles (4 oz can size)Your preference in heat level
1CanWhole Kernel Corn (15 oz can size)Drained
1TspSalt
1/2TspBlack Pepper
1TspCumin
1TspOregano
1TspChili Powder
4oz.Cream CheeseSoftened; Neufchatel recommended
1/4 CupHalf and Half
Chopped CilantroGarnishment
Optional for Spice Level:
Cayenne Pepper
Optional Toppings:
Avocados
Shredded Cheese
Sour Cream OR Plain Greek Yogurt
Tortilla Chips

Instructions
Cut off any excess fat on your boneless skinless chicken breasts, and add into the crockpot first.
Add all other ingredients to your slow cooker, EXCEPT for cream cheese and half and half.
Cook on low in your slow cooker for 8 hours, or high for 4 hours.
Once the chicken has cooked all the way through and is the chicken is tender, remove the chicken from the crockpot onto a plate. Use 2 forks to shred the chicken.
Add the shredded chicken back into the slow cooker, add in the softened cream cheese and half and half. Turn slow cooker on high for about 15-20 minutes until your chili has thickened and the cream cheese has melted all throughout the chili to give it that delicious creamy texture. Note: Make sure you have left your cream cheese out ahead of time to soften, or place in microwave to soften. If you add into the crockpot right out of the refrigerator, its fine, but it may take longer than 15-20 minutes to mix all the way into your chili.
Serve the creamy chili in bowls and add your favorite toppings, ENJOY!!
