1.5 CupsCornFrozen or canned (drain well if using canned)
1CanLow Sodium Black Bleans14oz. Can - drained and rinsed
2CupsLow Sodium Chicken Broth
4CupsCooked Shredded ChickenAbout 2lbs.
14 oz. CanMild Green Chilis
1tbsp.Olive OilTo prevent rice from sticking together
2tbsp.Tomato Paste
1.25CupsShredded CheeseMexican Blend or Monterey Jack
Garnishments:
Fresh Cilantro
Green Onions
Optional:
Cayenne Pepper or Red Pepper FlakesYour preference for heat level
Instructions
Preheat the oven to 400℉
Add in the onions, bell pepper, rice, fajita seasoning, other heat spices (if using) to a 9x13 baking dish (casserole dish)
Add in the chicken broth, green chilis, tomato paste, and olive oil
Stir until everything is well combined
Add the shredded chicken, black beans and corn to the baking dish and stir again until everything is well combined
Cover the dish with aluminum foil and bake in the oven for minutes
Remove the dish from the oven and sprinkle with cheese
Place the baking dish back into the oven and cook uncovered for 5-10 minutes until the cheese has melted
Remove from the oven and allow the casserole to cool for 10 minutes
Garnish with fresh cilantro and green onions
Add your favorite toppings, and ENJOY!!
