This heathy ground turkey sweet potato skillet is the perfect comfort recipe that your entire family will love. Great for meal prepping, and so simple and easy to make!
Start by heating the olive oil in a large pot or a deep skillet over medium high heat. Add the minced garlic and cook for about 1 minute, then add your lean ground turkey.
Brown the ground turkey until fully cooked, drain the cooked turkey if necessary.
Add the cumin, chili powder, salt and pepper and stir well.
Add the onion and bell peppers and stir well. Cook everything together for 3-5 minutes.
Add the diced sweet potatoes and 1/2 cup water and stir everything together well.
Stir and cover with a lid and cook until the sweet potatoes soften. The cook time could take 8-10 minutes depending on the size you cut your sweet potatoes. Add additional water during this process ONLY if needed to prevent from drying out.
Once the potatoes have softened and finished cooking, turn heat to low. Add in your shredded mozzarella and continue to mix in and stir well until cheese has melted and blended together.
Remove from heat completely and garnish with fresh cilantro. Serve and ENJOY!!
