Chicken Salad with Greek Yogurt

This homemade Chicken Salad with Greek Yogurt is seriously the best chicken salad you'll ever make. Not to mention, its very macro friendly and high in protein! Made with Apples, Cranberries, and Almonds, this Chicken Salad is a recipe keeper!

Ingredients

  • 2 Cups Cooked Chicken Shredded
  • 3/4 Cup Celery Diced
  • 1 Large Apple Diced
  • 1/4 Cup Craisins OR Dried Cranberries (Will affect Macros)
  • 1/4 Cup Almonds Sliced thinly

For the Greek Yogurt Dressing:

  • 1/4 Cup Light Mayo
  • 1/2 Cup Plain Greek Yogurt Nonfat
  • 1-2 Tsp Apple Cider Vinegar based on your desired taste
  • 1-2 Tsp Stevia I use Truvia; based on your desired taste
  • Dash of Salt and Pepper

Instructions

  • In a large mixing bowl, combine your dressing ingredients together. Plain greek yogurt, lite mayo, apple cider vinegar, stevia, salt and pepper, mix everything together until well blended. 
  • Add the shredded chicken, sliced almonds, diced celery, diced apples, and cranberries into the large mixing bowl with the dressing. 
  • Combine everything together and mix until well blended. 
  • Refrigerate for at least 30 minutes, and ENJOY!
