This is a great recipe for personal pizzas that your whole family is going to love. This healthy low carb pizza crust option is a great way to still enjoy pizza without feeling guilty.

When I was on my fitness journey, one of the things I felt really deprived of was good pizza, I was always having pizza cravings.

While my family was enjoying their delicious pepperoni pizzas, I was either depriving myself and having none, or going the opposite and forgetting my health goals and over-indulging.

I think we’ve all been there in our fitness and health journeys. One of the things I’ve learned along the way is finding great substitutes and hacks so you can still enjoy the things you love, FOOD!!

Once I learned this great alternative for delicious pizza without giving up my health goals, it felt too good to be true, because I now enjoy pizza weekly and have zero regrets.

Miniature pizza options:

 For today’s version of miniature pizzas we are doing a BBQ chicken option, but the options are endless.

Classic cheese, mini pepperoni, Hawaiian, black olives, peppers, any of your favorite pizza toppings! If your on a low carb diet, this is for you!

All you need is swap out the ingredients below with your favorites. This is a fun way to let your kids help with dinner as well. There will be little pizzas everywhere! 

So many topping alternatives for miniature pizzas, this one is classic pepperoni pizza on a low carb pizza crust.

Ingredients you’ll need to make miniature pizzas with a low carb pizza crust:

  • Pasta Sauce or Pizza Sauce – any kind
  • Mozzarella Cheese 
  • Red Onions – diced on sliced in thin strips 
  • Baby Spinach
  • Cooked Chicken – any kind will work, works best with rotisserie or left over chicken you have from another meal
  • BBQ Sauce 
  • Pita Bread – THE SECRET WEAPON! 
  • Parsley, fresh basil or Italian Seasoning is optional, but I like to always add a little something extra!

Low Carb Pizza Crust:

Pita bread – The ultimate hack for fast and quick low carb pizza crust for miniature pizzas because there is no prep. Simply assemble the pizza and cook.

The brand I go for is Joseph’s Pita Bread. For 1 whole pita it’s only 60 calories, 9 grams of carbs and 6 grams of protein. There are a ton of options out there, choose your favorite for this recipe.

Topping Notes:

Mozzarella Cheese – if you’re feeling really fancy, go for some fresh mozzarella. My mouth is literally watering thinking about it!!

To keep it short and simple, I tend to gravitate towards the pre shredded because its more convenient, but will use fresh if I want to be extra LOL.

You can certainly use a fat free version because it is lower in calories, just keep in mind it will not melt as nicely because of the fat content but still hits the spot! 

BBQ Sauce – You are using so little, so you really can use any kind. If you have been dying for some sweet baby ray’s, go for it!!!

I always have a bottle of Stubb’s original BBQ sauce in my kitchen and is what I use for this recipe because its more macro friendly. 

Meal Prep Notes:

Chicken – You can use any cooked chicken for this recipe. I always reccomend grabbing a container of pre shredded rotisserie chicken when your at the store.

It comes in handy for SO MANY quick meals, that you’ll be glad you have it to whip together something quickly.

Think miniature pizzas, wraps, dips, salads, and the list goes on. 

Onions – You can slice up an onion quickly for this recipe, or have some on hand already.

Part of my meal prepping reccomendation is to dice up some peppers and onions and keep on hand. They will stay good in the refrigerator for a week, or you can opt to dice them and freeze them for longer use.

Full recipe on how to make miniature pizzas with a low carb pizza crust option:

step 1:

Preheat conventional or toaster oven to 425 degrees and assemble your pizza. These can also be made in the air fryer. I suggest lowering the temp to 400 degrees and cook until cheese melts and its golden brown. 

step 2:

Spray a pizza pan or baking sheet with non stick spray so the pita bread doesn’t stick. If you don’t own a pizza pan with holes, I recommend grabbing one. Your pizza will cook perfectly every single time. The one we use is linked right here if you want to check them out.

step 3:

Assemble the pizza with your favorite toppings. Place the assembled miniature pizza on the pan and cook for 10 minutes once the oven has preheated.

Place your favorite toppings and assemble on the miniature pizzas before placing in the oven to cook.

step 4:

Remove from the oven and let cool. Enjoy!!

  • 1 Pizza Pan or Cookie Sheet Preferably one with holes if you have one

Ingredients

  • 1 Pita Bread Recommend Joseph's Pita Bread brand for Low Carb Pizza Crust
  • 1/2 Cup Pasta Sauce You may use pizza sauce or tomato sauce as well
  • 1/4 Cup Mozzarella Cheese Fresh or Pre Shredded; opt for Fat Free for lower fat option
  • 1/8 Cup Sliced Red Onions I would use more or less to suit your preference
  • 1/4 Cup Baby Spinach
  • 1 oz. Cooked Chicken Shredded or diced
  • 1 Tbsp BBQ Sauce
  • Parsley or Italian Seasoning for Garnishing

Instructions

  • Preheat conventional oven or toaster oven to 425℉
  • Spray the pizza pan with a non-stick cooking spray so the pita bread doesn't stick
  • Prep your toppings by slicing your red onion and slice your grape tomatoes in half
  • Spread the sauce onto the pita bread first
  • Sprinkle the mozzarella cheese
  • Add the rest of the toppings to your preference and arrange to your liking
  • Once the oven has preheated, please the pizza in the oven for 10 minutes
  • Remove pizza and ENJOY!!!
