Healthy White Chicken Chili (Crockpot Recipe)

This healthy white chicken chili made in the crockpot is so creamy and delicious, its one of my favorite dump-and-go crockpot recipes.

This is one that makes its rounds in the fall and winter time because its SO friggin easy and most definitely husband and kid approved.

The best part? My kids can crinkle tortilla chips on top, and they feel like they are hot nuggets because I am letting them put chips on their dinner. Little do they know how healthy this meal actually is. MAMA wins again. 🙂

I am not a super big traditional beef chili fan, my mom always made it growing up.

While as an adult, I do enjoy trying different variations of it. Trying to get me to eat those ginormous kidney beans as a kid? You best forget about it.

Traditional chili recipes is usually made with ground beef or ground turkey, kidney beans or black beans and a tomato base.

This white chicken chili? Friggin’ chili on crack, lemme tell ya. I’m still not a bean person, this recipe has white beans and I don’t even mind it one stinkin bit.

One of my favorite parts about this crockpot chili? It’s so macro friendly that I load up my bowl with this yummy stuff, add my favorite toppings and its chow time baby. It is so satisfying and so filling.

Add all your favorite toppings to this crockpot chicken chili. My favorites are plain Greek yogurt, tortilla chips and avocado.

Ingredients you’ll need for this white chicken chili:

These simple ingredients below make a big batch of this great recipe. 

  • 2 Boneless Skinless Chicken Breast (about 1.5 to 2lbs)
  • 1 Yellow Onion
  • 2 Cloves Garlic Minced
  • 24oz Low Sodium Chicken Broth
  • 2 cans of Great Northern Beans
  • 1 Can of Whole Kernel Corn
  • 2 4oz Cans of Diced Green Chilis (get whatever spice level you prefer)
  • Salt and Black Pepper to Taste
  • Ground Cumin
  • Oregano
  • Chili Powder
  • Fresh Cilantro
  • Cream Cheese; softened (I use neufchatel kind for macro purposes)
  • Half and Half 

How to make healthy white chicken chili:

Step 1:

Cut off any excess fat on your boneless skinless chicken breasts, and add into the crockpot first. 

Step 2:

Add all other ingredients to your slow cooker, EXCEPT for cream cheese and half and half.

Step 3:

Cook on low in your slow cooker for 8 hours, or high for 4 hours. Here is the type of slow cooker that I love right here.

It’s programable, so if your not going to be home in time, it will automatically shut off. These slow cookers are a life saver. 

Step 4:

Once the chicken has cooked all the way through and is the chicken is tender, remove the chicken from the crockpot onto a plate.

Use 2 forks to shred the chicken, or this handy chicken shredder tool that I absolutely love right here

Step 5:

Add the shredded chicken back into the slow cooker, add in the softened cream cheese and half and half.

Turn slow cooker on high for about 15-20 minutes until your chili has thickened and the cream cheese has melted all throughout the chili to give it that delicious creamy texture. 

Made in the slow cooker, this white chicken chili is so healthy and filling, your whole family is going to love it!

Note: Make sure you have left your cream cheese out ahead of time to soften, or place in microwave to soften.

If you add into the crockpot right out of the refrigerator, its fine, but it may take longer than 15-20 minutes to mix all the way into your chili. If your not pressed on time, its totally fine. 

Step 6:

Serve the creamy chili in bowls and add your favorite toppings, ENJOY!!

Can you spice this up?

Heck ya. My husband is not a huge fan of spiciness, however, I LOVE SPICY.

If your family leans spicy, add some cayenne pepper, red pepper flakes or chipotle pepper to this easy chicken chili recipe to get your spice on.

You can also increase the heat level with different toppings if you don’t want to make the entire dish spicy.

Protein Options?

You can definitely use other protein variations in this recipe.

Sometimes we need to switch it up a bit. If that’s the case for you, try using some turkey instead, or even chicken thighs.

All options are absolutely delicious and will give your chili some great flavor. 

Need more liquid?

After you shred your cooked chicken and add it back in, if you feel like you need more liquid, go ahead and add more chicken broth or water. I’d start with a half cup, and add to your preference. 

How to store healthy white chicken chili:

This white chicken chili is so good reheated the next day. Store any leftovers in an airtight container in the refrigerator for up to 4-5 days. 

To meal prep, store in individual meal prepping containers in the refrigerator until your ready to eat. I recommend keeping your toppings separated until your ready to consume. 

This chicken chili made in the slow cooker is also fantastic for meal prepping.

Can you freeze? 

Yes!! Make sure to cool the chili off completely before storing in freezer safe containers.

When your ready to eat, make sure to dethaw overnight in the refrigerator. 

I do recommend leaving out the cream cheese and half n half when freezing.

It’s ok if you don’t, but it does freeze better without it. If you do this method, you can add in the cream cheese and half and half while reheating, just use a small amount.
