These are always a hot item in my house that I make regularly as a quick and perfect side dish that the entire family loves and gobbles up.

If you’ve ever lived or visited the North East of the US, you may have heard of Wawa or Royal Farms. Well, lemme tell you how these yummy air-fried potato wedges came about. My family is a Wawa family…..all the way.
If you go to Royal Farms, your considered to be a traitor. I know, us northerner’s take it pretty serious.
The problem is Royal Farms sells delicious crispy potato wedges, that’s problem number 1. The bigger problem is, even when I’m craving these and will sneak them past my husband, they are SOOO bad for you.
You might as well go to Mcdonald’s for some fast food because your macros for the day went out the door.
These are the best and crispiest air fryer potato wedges with way less calories and much healthier.
So, my friends, that’s when we decided to whip out the trusty air fryer because it just never disappoints.

How to Make Healthy Potato Wedges in the Air Fryer:
Simple Ingredients You’ll Need:
- Russet Potatoes
- Olive Oil
- Seasoning Blend of Your Choice; I am using Salt, Black Pepper, Italian Seasoning and Garlic Powder
- Optional; Add some cayenne pepper or red pepper flakes for some extra spice
Easy Steps to Make Homemade Potato Wedges:
Step 1
Scrub your potatoes to remove any dirt, pat dry, then slice potatoes into wedges on a cutting board.
Step 2
Add your sliced wedges into a large bowl and fill with cold water. Let the wedges soak for 30 minutes.
Note – I cannot stress the importance of this step, soaking those wedges will get that delicious crispiness we want and love.
Step 3
Drain the water, pat dry the potato wedges, and preheat the air fryer to 400 degrees.
Step 4
While the air fryer is preheating, toss the potato wedges with olive oil and your spice blend.
Step 5
Place the wedges into a single layer in the air fryer basket or tray, cook for 17-20 minutes and flip half way through. Cook until you reach your desired crispiness.
Step 6
Remove from the air fryer, let cool and serve with your favorite dipping sauce! Enjoy!!

Is soaking necessary?
I highly recommend it. BUT, if your short on time, then no its not. I totally get it, I am the shortcut master.
You can still create this easy side dish recipe in no time, they just may not be as crispy and more on the tender side. Totally your call, they are so tasty either way!
Leftovers?
Come on, these air-fried wedges are so stinkin tasty, your going to be lucky if you have leftovers. If you do have leftover potato wedges, be sure to store them in an airtight container in the refrigerator for up to 3 days.
When reheating, I recommend throwing back in the air fryer for a few minutes so they get their crisp back. Just be sure not to overdo it and burn them. You can reheat in the microwave as well, they will just be softer.
