This chicken salad calls for chicken, sweet apples, celery, dried cranberries and almonds.

Ingredients you’ll need:

  • Pre-Cooked Chicken; Shredded
  • Celery
  • Apples
  • Dried Cranberries (I use Craisins for macro purposes)
  • Sliced Almonds
  • Plain Greek Yogurt
  • Lite Mayo
  • Apple Cider Vinegar
  • Stevia
  • Dash of Salt and Pepper

Step-by-step instructions:

Step 1

In a large bowl, combine your dressing ingredients together. Plain Greek yogurt, lite mayo, apple cider vinegar, stevia, salt and pepper, mix everything together until well blended. 

Step 2

Create the chicken mixture by adding the shredded chicken, sliced almonds, diced celery, diced apples, and cranberries into the large mixing bowl with the dressing. 

Step 3

Combine everything together and mix until well blended. 

Step 4

This apple cranberry chicken salad is best served cold so make sure you refrigerate for at least 30 minutes, and ENJOY!

Protein Options for this easy recipe:

Feel free to use chicken leftover from another recipe, or I’ll grab a container of the pre shredded cooked rotisserie chicken a lot of the times to keep on hand for recipes like this one.

I’ve also made this salad with leftover turkey from Thanksgiving for a delicious fall salad.

You can use canned chicken for this recipe, but note it will not deliver the same taste and texture may be different. For that reason and to get the best flavor, I recommend sticking with regular shredded chicken. 

​Cranberry Substitutions:

Cranberries have a TON of health benefits, but tend to be really high even in natural sugar.

I use craisins in this recipe, I get the same sweetness, with half the amount of sugar.

You can also opt for grapes sliced in half if you want to skip the cranberries all together. 

I love meal prepping this chicken salad with Greek yogurt, for an easy no effort meal during the week.

Do I need to use almonds?

No! You can skip the almonds all together, or you can use another nut variation. Around the holidays, I will go for some crunchy pecans instead.

Ingredients

  • 2 Cups Cooked Chicken Shredded
