HOW TO MAKE TACOS IN THE CROCKPOT

It couldn’t be more delicious or easy for a no fuss family meal that takes less than 10 minutes to make. This is a great option for those who have busy days or busy nights and making dinner is the last thing you want to think about.

Tacos have always been a staple in our home, especially on Tuesday’s. Did someone say TACO TUESDAY?

We enjoy a good taco night all year round, because its just one of those meals that your whole family loves on a hot summer day or a cold winter night.

You can dress them up or down….my favorite ways are in salads, flour tortillas, corn tortillas, nachos, over rice, all are good choices.

  • 2 packets of taco seasoning or feel free to use homemade taco seasoning
  • 2 lbs. of chicken breast
  • 1 cup of salsa
  • 1 cup of chicken broth

Assemble your healthy chicken tacos once its done cooking in the crockpot for a delicious macro friendly meal!

To create this recipe on making tacos in the crockpot here’s what you’ll need to do:

step 1:

Start by trimming any excess fat off your chicken breast and add to the crockpot

Rub the chicken with the taco and ranch seasoning. 

Add in the chicken broth and salsa. 

Step 2:

Cook on low for 4-5 hours. Avoid overcooking.

step 3:

Once the chicken is fully cooked, carefully move the cooked chicken over to a bowl or plate and use a large fork to shred. 

step 4:

Add to your favorite tortilla and add your favorite taco toppings to create a delicious meal!!

  • Ranch dressing (bottled or create your own for a healthier option)
  • Taco sauce
  • Store-bought salsa
  • Plain Greek yogurt (my favorite substitute for sour cream)
  • Whole kernel corn
  • Pico de gallo
  • Black Beans
  • Refried beans
  • Avocado
  • Fat free shredded cheese (or regular if it fits your macros)
  • Diced jalapenos for that extra kick
  • Tomatoes
  • Romaine lettuce
  • Rice
  • Tortilla Chips

If you’re like me, you struggle on hitting your protein goals some days and find yourself at the end of the day aimlessly looking around your kitchen seeing what you can find to hit that goal.

An easy way to sneak this into a lot of meals is plain Greek yogurt.

Other high protein options for this meal is to grab Mission protein tortillas. These tortillas are very calorie and macro friendly and high in protein.

How to store the leftovers and meal prepping tips:

Store in an airtight container in the refrigerator. When ready to reheat, heat in the microwave or stovetop.

This is a fantastic recipe to meal prep on a Sunday afternoon to prepare you for the week.

When meal prepping, I would recommend keeping everything separate until you’re ready to assemble.

Ingredients

  • 2 lbs. Chicken Breast
  • 2 packets Taco Seasoning Or create your own
  • 1 cup Chicken Broth Low Sodium
  • 1 cup Salsa

Optional Ingredients:

  • 1 tsp Cayenne Pepper More or less to your preference

Optional Toppings:

  • Tortilla Shells See notes above for recommendations on high protein tortilla shells
  • Shredded Cheese Opt for Fat Free for lower fat content

Instructions

  • After trimming the excess fat on the chicken, put the chicken in the crockpot
  • Coat the chicken in taco seasoning
  • Add in the chicken broth
  • Pour salsa over top of the chicken
  • Cook on low for 4-5 hours until chicken is done, avoid overcooking
  • Remove chicken from the crockpot and shred the chicken with a large fork
  • Serve with your favorite add-ons on tortillas, over rice, or salad and Enjoy!!
